Ham and Cheese!

Today, I am in Oklahoma hunkered down in Wedding Central. But yesterday I made a nice easy meal for a quick dinner. Everyone loves ham and cheese, right? No. But for those who do, this is a fun thing to make when you're short on time or yearning for easy comfort food. Like the english muffin pizzas that my babysitter used to make, these little ham 'n cheese rolls take me back. They're just that kind of grub.

So, start with a store-bought tube of pizza dough, roll it out into a big circle, and slice it like a pizza into 8 slices. Place a slice (or two) of ham in the middle, along with a slice of cheese (I prefer cheddar, the man prefers swiss), and some thin-sliced vidalia onions. Roll each one up and place on a piece of parchment paper or foil so you don't have to scrape cheese off of your cookie sheet. Bake for 20 minutes at 400 degrees and voila! Serve them with tater tots for the true childhood experience. Yum!
